I think this year's format was great (obviously!).
However I would suggest something like drawing 3 (or 5) starting stations and 3 (or 5) end stations and each team can select their pair from these. At least I would have a much harder time preparing for that...

You could add some of the change stations to the hat, specifying which line / set of platforms you must leave on.
Eg. Oxford Circus (Victoria), Baker Street (MCH), London Bridge (Northern).

Unfortunately, the date cannot please everybody unfortunately. Also the tube is busier during the off peaks during the school holidays, with more prams, pushchairs, and generally clueless people clogging up the cross passageways and escalators.
