I was just looking at the underground map on my wall, and I wondered whether it would be possible/worth it to do a "Not Zone 1" challenge, where you have to do the whole thing but not enter zone 1 at all. Notting Hill Gate, Vauxhall, Earl's Court and Elephant & Castle should still be done as they are also zone 2.

Anyone have any thoughts?

not for me I'm afraid. I barely had enough energy and enthusiasm for Zone 1. I also think that people should try and master the current challenges before making new ones. But good luck though!
